North Philadelphia’s  2350 West Westmoreland Street // SpArc Services site where I took part in a 90-day training program with MANNA.
Summer of 2016.
        *    I was Trained to cook foods safely in large quantities.
·  Diced vegetables and fruits safely to specification.
·  Worked with the ovens to bake cakes from scratch.
·  Worked in the food lines to prepare foods for MANNA’s home-bound clients.
·  Cleaned the kitchen work areas before I left for the day.

After kitchen training for six weeks with a professionally qualified chef, I successfully received my Serv.Safe Certificate { Serv.Safe Certificate Number 14312656 } at the People’s Emergency Center at  325 North 39th Street, in West Philadelphia. Text books used included ``On Cooking a Textbook of Culinary Fundamentals,’’ by Priscilla A. Martel, Alan M. Hause, and Sarah R. Labensky; and ``Servsafe Manager 6th Edition Book,’’

August 2016 through October 2016.  
·  Learned about food safety first hand.
·  Learned how to interact positively with my classmates.
·  Learned to use temperature safety measures with foods by using our source books. ( Get name of source books from home).

it wasn't granola .....

No, it wasn't granola bars and yogurt these sweet little black boys were munching on. It was the much more traditional, more typical potato ships. The Mom of these cute four-year-ole light-skinned Black boys probably doesn't know that the corner Poppie store she bought them { the chips } from is part of a national trend to keep our Black children malnourished, over weight and part of what feeds into the Black community's inability to economically sustain itself.   One gentleman had on sneakers. The other one – on the left – had on black converses. If they weren’t the cutest children I have ever seen since my nephews Kamau and Muata were baby boys, I am not your GOD. Which I am by the Way {2000 Seasons by  Ayi  Kwei Armah } Why do we have to contend with a conspiracy against Black Boys when they are only 4 years ole? { ``Counter the Conspiracy to Destroy Black Boys, Volume 1’’ By Jawanza Kunjufu. }.  Why are they rarely tracked for doom, failure and prison if they fail 5th grade math?   ``Black Boys in Crisis: Eliminating the School-to-Prison Pipeline,’’ on the internet { GOODLE }.  


     I am not going to blame White men on the Supreme Court; The head of Apple Corporation; The gentleman who occupies the White House; Bowing; Lockheed; The Democratic Congress; The Republicans and the Republican Senate;  poverty's stick-to-your-ribness; The Beach Boys; and Janis Joplin.


     I'm GOD Almighty and unlike a group of out-of-touch Black intellectuals who attended a WURD Black Talk radio program { 900 AM or 96.1 FM } here in Philadelphia, who gave the Black community excellent grades just for surviving - I am giving the Black community a big fat ``F'' for not trying hard enough; for getting fat and out-of-shape; and for not watching closely when First Lady Michelle Obama was seen on national television starting a community  vegetable garden during her first days in the White House. Half of us be woke, half of us sleep. 


     In my neighborhood at 41st and Lancaster Avenue we live in a nutrition desert - a Black news commentator on WURD calls it a nutrition desert - a place where food is plentiful, but nutritious food is sorely lacking } I think this term - nutrition desert - is more accurate.


     Those twins were formulating the texture and chemical base for their brains with each chomp on those worthless { nutritionally } potato chips. {https://drewramseymd.com/blog/ The Brain Food Blog }. -  Plenty of oil, fat, salt, starch and white potatoes are included in fried potato chips. I eat the in small moderation.  Those handsome little boys need something much better for their brains to feast on. Once those worthless chips become a part of what you rely on to think properly, it is not as easy as you might think to turn around and challenge yourself to learn How to eat better. ( You should do some research on food addictions and fast foods before you just accept what I'm saying here. Some knowledgeable people say you can always turn things around and eat better no matter how far you have stepped away from the healthy table. I think eating less processed foods that have ben prepared in advance with additives and preservatives is far less healthy than eating fresh fruits and fresh vegetables, a very traditionally-head belief among nutritionists and people like myself who are well-read on this subject. [ I am not a qualified nutritionist, but will take classes soon to work towards this goal]).  In my estimation, chips can lead to pork ribs, and possibly fried chicken and possibly French fries and possibly fish loaded with salt and fat. { OH, GOD FORBID!} The famed Philadelphia cheese steak ad a beer. Eating is a learned behavior and so is what you learn to eat at an early age. How many times have I been to a funeral repast and the guest of honor is sitting pretty due to a long history of eating junk food? Way too often. Diabetes, high-blood pressure, obesity, lack of exercise, heart disease, stroke, smoking cigarettes, smoking cigars & bunts, an extra slice of blueberry pie, a pop tart, alcohol - 75 pounds over weight. When you are too heavy {I'm not even going to talk about eating salt pork, lard, regular margarine & sodas which you already know you can't eat or drink}. When you are too heavy you are asking your heart to do the impossible - maintain good health and adequate blood flow under conditions that are not the best.  


     I know you are sick & tired of hearing about the health dangers held in our control because it almost make us seem like the family doctor or even, perhaps GODS, because each choice is so important and vital.


     The mother of those two 4-year-ole handsome boys - the potato chip munchers -  was dooming Her sons to serving a doomed life sentence unless she turns Her Titanic right-side up and starts feeding them more healthy meals. Healthy meals like what is available at Trader Joes { 2121 Market Street }; Govinda's Vegetarian Restaurant { 1408 South Street }; Atiya Ola's Spirit First Foods { 310 South 48th Street, near Spruce and 48th Street }; Hibiscus Juice Bar at 49th and Baltimore Avenue};

     Visit CUBA and Discover Its Glorious Past and Exciting Future!

     Cuba is NOT a massive country, but it is one of the most incredibly beautiful countries in the Caribbean and in the WORLD.  It has beauty because of its freedoms and its balance towards How people are treated, not just because it is in fact beautiful.  When Fulgencio Batista – a Turtle Island supported dictator, was defeated in 1959, Cuba’s new leader Fidel Castro tossed out the repressive folk who used the island nation as a ``playground for the rich’’ full of corruption, illegal drugs, prostitution, gambling and plenty of money to be made for the rich.  Little care, under Batista, was offered to the grass-roots people who wanted to just have enough money to thrive, have a decent life, and educate their children. If you are planning a trip to the lush, fantastic island of CUBA, please do some homework and read about its rich history and How the people have worked so hard against ``invading forces’’ such as the former United States { NOW Turtle Island }, which was setting sights on profits, degradation of the people and how to make money instead of how to help the people, bring up living standards, improve education, improve health conditions, and help CUBA’s people have the best lives possible.
   Some of the recent good books I have read parts of include ``The Essential Guide to Customs & Culture CUBA’’; and ``CUBA Enchantment of the World,’’  by Deborah Kent.  Both books speak to the wonders of CUBA, some of which I remember from my 1991 trip there.  I visited Ernesto Che’ Guevara High School and met some of the excited children during a break in their day of learning. I visited a hospital that had a farm in the back where plants for medicines were grown. I also visited a Chinese-donated bike factory where CUBANS put together their own bikes in an effort to cut back on fuel consumption.  { Many of the cars were, back then very old and dated back to the days just before the 1959 REVOLUTION }.  
    
      CUBA has some really nice sites like the Jose Marti Memorial which stands 109 meters high and is reminiscent of ancient Egyptian Obliquus;  wild life that includes the mongoose, the hutias, a world of wild birds like the Cuban tody and the nation’s national bird, the tocororo or Cuban trogon; the  solenodon { a rare mammal } is also an attraction; beautiful exotic flowers like the National flower the white ginger lily; and even wild snakes like the Cuban boas.  There are also Cuban crocodiles in exotic parts of Cuba, outside of the Main large city, Havana.  Some of these wild-life areas include Zapata Swamp and the Isla de la Juventud.  There are also beautiful butterflies such as the malachite butterfly among the country’s 180 or more species of butterflies. Cuba has rain forests where lizards, frogs   and exotic plans are a natural part of the scenery similar to Brazil’s natural rainforests.  The Cuban People are also fortunate enough to have bottle-nosed dolphins and sei whales.  Some of the rain forests are in the south region where incredible water falls can be found like at El Nicho Falls near Cienfuegos.
     There are CUBAN freedom fighters who fought against the Spaniards like Hatuey; and Celia Sanchez who helped with food and medicines for the revolutionaries.   It is exciting and fun to look into CUBA’s historical figures such as these.  I found The Kent book especially exciting and interesting to read regarding the history and traditions of CUBA. 

  Dear Cuban friends: I thank you for giving me the exciting and Holy opportunity to write about your country and add my own memories from my trip there many years ago with the Workers World Party member of the Venceramous Brigade in 1991.  I am sending you a rough draft of what I wrote along with the sources I used.
